This figure is a process flow diagram of a steam heat exchanger used to concentrate maple syrup. The process simply involves inducing heat to the syrup to boil off water content in the syrup to make it thicker. The steam is induced in the heat exchanger. This exchanges heat from the steam to the syrup making it boil. This is the chamber where the boiling takes place. The concentrated syrup exits the evaporator at the bottom and the water vapour exits at the top. The pump is used to circulate the syrup throughout the process. The text labels in the diagram refers to the following instruments: FT (Flow Transmitter): This measures the rate of flow of the maple syrup. LT (Level Transmitter): This measures the level of the liquid in the evaporator. LC (Level Controller): This maintains the level of the liquid in the evaporator by adjusting the liquid pump. AT (Analyzer Transmitter): This measures the concentration of the maple syrup. AC (Analyzer Controller): This maintains the desired concentration of the maple syrup in the evaporator by adjusting the steam supply to the heat exchanger.
